After scaling up our GT Gose recipe to a higher gravity and increasing the additions of botanicals, we aged it for three months in third-use barrels that once housed our Bourbon Barrel Stout. The resulting beer is truly unique and complex: the deeply charred barrels impart a notable “bourbonesque” hue to its appearance, while hints of vanilla and oak give balance to the botanicals leading to a soft bourbon flavor up front and a juniper-like finish.

Funky Prowler is a barrel aged dry irish stout. It has a complex flavor profile from the roasted malts combining with the house sour yeast cultures. Starts our smooth until a sharp sourness surprises the palate before ending in dry roasted finish. The tasting notes of black cherry and deep rich berries comes from the house yeast interacting with the dark malts.
his is Infinite’s version of what some would refer to as a Russian Imperial Stout; but since we brew all ‘Belgian Inspired’ beers, this is our version of a dark, rich stout. The beer is dark; just as total darkness is. At first glance many fear it, but with a slight chance with the aroma, fears start to subside and are replaced with a strong urging to enter the darkness. Surely there was an easier way to go about this – at least that’s what we were thinking as we looked at the hundreds of pounds of organic Sarsaparilla root we needed to make The Washboard. Our first task – getting the Sarsaparilla root from its bark-like form into smaller pieces (this helps more of the Sarsaparilla flavor to come through). Our poor old school kitchen blender was hardly up for this task, but when it was done we steeped an apple cider blend with the Sarsaparilla and a touch of vanilla. This combination gives the cider a mild earthy flavor, offset by warm, creamy notes of vanilla and caramel. The final product – The Washboard – is herbaceous and dry with a long lasting creamy finish that is reminiscent of rootbeer without the sweetness.
Strongbow Orange Blossom has a spring-like fresh orange blossom aroma and a smooth yet sweet complexity that goes from the nose to the palate with a fine texture that is well balanced. It finishes with a just the right citrus and floral notes for a delicious and refreshing taste.
